Description
A hearty and healthy soup inspired by traditional cabbage rolls. Packed with vegetables and lean protein, it’s a comforting meal.
Ingredients
- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground turkey and cook until browned.
- Add onion and garlic, sauté for 2 minutes.
- Stir in cabbage, carrots, and celery.
- Add diced tomatoes, chicken broth, thyme, and paprika.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Use ground chicken or beef if preferred.
- Add rice or quinoa for extra texture.
- Store leftovers in the fridge for up to 3 days.
