Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 tbsp cajun seasoning
  • 8 oz whole wheat pasta
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups spinach
  • 1 cup low-fat shredded cheese
  • 1 cup low-sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, then drain.
  3. Heat olive oil in a pan. Add chicken and cook until browned. Sprinkle with cajun seasoning.
  4. Add bell pepper, onion, and spinach to the pan. Cook until softened.
  5. In a bowl, mix chicken broth, Greek yogurt, garlic powder, and paprika.
