Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 avocado
  • 1 lime, juiced
  • 1/4 cup red onion, diced
  • 1/4 cup cherry tomatoes, halved
  • 2 cups mixed greens
  • Salt and pepper to taste


Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a pan over medium heat. Cook the chicken for 5-6 minutes per side until fully cooked.
  3. Let the chicken rest for 5 minutes, then slice into strips.
  4. Mash the avocado in a bowl and mix with lime juice, red onion, and a pinch of salt.
  5. Toss the mixed greens with cherry tomatoes.
