Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 avocado
- 1 lime, juiced
- 1/4 cup red onion, diced
- 1/4 cup cherry tomatoes, halved
- 2 cups mixed greens
- Salt and pepper to taste
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- Heat olive oil in a pan over medium heat. Cook the chicken for 5-6 minutes per side until fully cooked.
- Let the chicken rest for 5 minutes, then slice into strips.
- Mash the avocado in a bowl and mix with lime juice, red onion, and a pinch of salt.
- Toss the mixed greens with cherry tomatoes.
- Assemble the salad by placing greens on a plate, topping with sliced chicken, and a scoop of guacamole.
Notes
- Add extra lime juice for a tangier guacamole.
- Use pre-mixed Cajun seasoning or make your own with paprika, garlic powder, and cayenne.
