Description
A healthy and flavorful casserole combining Cajun-spiced shrimp with quinoa for a protein-packed meal.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onion, bell pepper, and garlic for 3-4 minutes.
- Add shrimp and Cajun seasoning. Cook until shrimp turns pink, about 2-3 minutes.
- In a baking dish, combine quinoa and vegetable broth. Spread shrimp mixture on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Use pre-cooked shrimp to reduce cooking time.
- Adjust Cajun seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
