Description

A healthy and flavorful casserole combining Cajun-spiced shrimp with quinoa for a protein-packed meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onion, bell pepper, and garlic for 3-4 minutes.
  3. Add shrimp and Cajun seasoning. Cook until shrimp turns pink, about 2-3 minutes.
  4. In a baking dish, combine quinoa and vegetable broth. Spread shrimp mixture on top.
  5. Cover with foil and bake for 25 minutes.
  6. Remove foil and bake for another 5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

  • Use pre-cooked shrimp to reduce cooking time.
  • Adjust Cajun seasoning to taste.
