Description

A healthier take on classic mac and cheese with caramelized onions for extra flavor.


Ingredients

  • 8 oz whole wheat elbow macaroni
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 2 cups low-fat milk
  • 2 tbsp all-purpose flour
  • 1 1/2 cups shredded low-fat cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook macaroni according to package directions. Drain and set aside.
  3. Heat oil in a large skillet over medium heat. Add onions and cook until caramelized, about 20 minutes.
  4. In a saucepan, whisk milk and flour until smooth. Cook over medium heat until thickened.
  5. Add cheeses, salt, pepper, and paprika. Stir until melted.
  6. Combine cooked macaroni, cheese sauce, and caramelized onions.
  7. Transfer to a baking dish and bake for 20 minutes until bubbly.

Notes

  • Use a nonstick skillet for easier caramelization
  • Stir onions frequently to prevent burning
  • For extra crispiness, broil for 2 minutes after baking
