A delicious and healthy twist on classic beef tacos with caramelized onions for added flavor.
Ingredients
- 1 lb lean ground beef
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 8 small whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup plain Greek yogurt
- 1/4 cup chopped cilantro
Instructions
- Heat olive oil in a pan over medium heat.
- Add sliced onions and cook until caramelized, about 15 minutes.
- Remove onions from the pan and set aside.
- In the same pan, cook ground beef until browned.
- Add salt, pepper, cumin, and paprika to the beef.
- Stir in caramelized onions and cook for 2 more minutes.
- Warm tortillas in a dry pan or microwave.
- Fill tortillas with beef mixture, lettuce, tomatoes, yogurt, and cilantro.
