Description
A quick and healthy breakfast burrito packed with caramelized onions, cheese, and eggs.
Ingredients
- 2 large eggs
- 1/4 cup shredded cheddar cheese
- 1/2 medium onion, thinly sliced
- 1 tbsp olive oil
- 1 whole wheat tortilla
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add sliced onions and cook until caramelized, about 10 minutes.
- Whisk eggs in a bowl and season with salt and pepper.
- Pour eggs into the pan and scramble until cooked.
- Sprinkle cheese over the eggs and let it melt.
- Warm the tortilla in a dry pan for 30 seconds.
- Place the egg and onion mixture on the tortilla.
- Roll the tortilla into a burrito and serve immediately.

- Use a non-stick pan for easier cooking.
