Description
A simple and healthy skillet dish featuring caramelized onions and tender chicken thighs.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 cup chicken broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt, pepper, thyme, and paprika.
- Place chicken thighs skin-side down in the skillet. Cook for 6-7 minutes until golden brown.
- Flip the chicken and cook for another 5 minutes. Remove from skillet and set aside.
- Add sliced onions to the same skillet. Cook on low heat for 15 minutes, stirring occasionally, until caramelized.
- Return chicken to the skillet, nestling it into the onions.
- Pour chicken broth into the skillet. Cover and simmer for 15 minutes.
- Remove lid and cook for 5 more minutes to thicken the sauce.
- Serve hot with your choice of sides.
Notes
- Use a cast-iron skillet for even heat distribution.
- For extra flavor, deglaze the skillet with a splash of white wine before adding the onions.
- Leftovers store well in the fridge for up to 3 days.
