Description

A nutritious and flavorful vegan bowl featuring caramelized onions and protein-packed lentils.


Ingredients

  • 1 cup brown or green lentils, rinsed
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 2 cups vegetable broth
  • 2 cups cooked quinoa or rice
  • 1/4 cup chopped fresh parsley


Instructions

  1. Heat oil in a pan over medium heat. Add onions and cook for 15 minutes, stirring occasionally.
  2. Sprinkle salt, pepper, and smoked paprika over the onions. Cook for another 10 minutes until caramelized.
  3. Add lentils and vegetable broth to the pan. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve the lentil mixture over cooked quinoa or rice.
  5. Garnish with fresh parsley.

  • Store leftovers in an airtight container for up to 3 days.
