Ingredients
- 8 oz whole wheat macaroni
- 2 cups sharp cheddar cheese, shredded
- 1 cup low-fat milk
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 tbsp whole wheat flour
- 1 tsp Dijon mustard
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Cook macaroni according to package instructions. Drain and set aside.
- Heat olive oil in a pan. Add onions and cook on low heat until caramelized (about 20 minutes).
- In a separate pot, whisk flour into milk over medium heat until thickened.
- Add cheese, mustard, salt, and pepper to the milk mixture. Stir until smooth.
- Combine cooked macaroni, caramelized onions, and cheese sauce. Mix well.
- Serve warm.
