Description

A flavorful and healthy soup made with caramelized onions and mushrooms, perfect for a light meal.


Ingredients

  • 2 large onions, thinly sliced
  • 2 cups mushrooms, sliced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf
  • 1 tbsp balsamic vinegar


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and cook, stirring occasionally, until caramelized (about 20 minutes).
  3. Add mushrooms and cook for another 5 minutes.
  4. Pour in vegetable broth and add salt, pepper, thyme, and bay leaf.
  5. Simmer for 15 minutes.
  6. Stir in balsamic vinegar before serving.

Notes

  • You can use any type of mushrooms.
  • For extra flavor, add a splash of white wine while cooking onions.
