Description
A flavorful and healthy soup made with caramelized onions and mushrooms, perfect for a light meal.
Ingredients
- 2 large onions, thinly sliced
- 2 cups mushrooms, sliced
- 2 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
- 1 tbsp balsamic vinegar
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and cook, stirring occasionally, until caramelized (about 20 minutes).
- Add mushrooms and cook for another 5 minutes.
- Pour in vegetable broth and add salt, pepper, thyme, and bay leaf.
- Simmer for 15 minutes.
- Stir in balsamic vinegar before serving.
Notes
- You can use any type of mushrooms.
- For extra flavor, add a splash of white wine while cooking onions.
- Store leftovers in an airtight container for up to 3 days.
