Ingredients

  • 1 cup orzo pasta
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp balsamic vinegar (optional)
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Cook orzo according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add onions and cook until caramelized (about 15-20 minutes). Stir occasionally.
  3. Add minced garlic and cook for 1 minute.
  4. Mix in cooked orzo, salt, and pepper. Stir well.
  5. Remove from heat and add fresh herbs. Toss gently.
  6. Drizzle with balsamic vinegar and sprinkle Parmesan cheese if desired.
  7. Serve warm.
