Ingredients

  • 1 1/2 cups grated carrots
  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, whisk honey, applesauce, eggs, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in grated carrots and walnuts.
  5. Pour batter into the loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.
  6. Let cool before slicing.

Notes

  • Store in an airtight container for up to 3 days.
  • For extra moisture, add 1/4 cup crushed pineapple.
