Description
A moist and flavorful carrot cake bread that’s both healthy and delicious. Perfect for breakfast or a snack.
Ingredients
- 1 1/2 cups grated carrots
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, whisk honey, applesauce, eggs, and vanilla extract.
- Combine wet and dry ingredients, then fold in grated carrots and walnuts.
- Pour batter into the loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- For extra moisture, add 1/4 cup crushed pineapple.
- Substitute walnuts with raisins if preferred.
