Ingredients
- 1 head cauliflower, chopped into florets
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 boneless, skinless chicken breasts
- 1 cup cooked brown rice
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, cumin, paprika, salt, and pepper.
- Spread cauliflower on a baking sheet and roast for 25 minutes.
- Season chicken breasts with salt and pepper, then grill for 6-7 minutes per side.
- Slice chicken into strips.
- Assemble bowls with brown rice, roasted cauliflower, chicken, avocado, tomatoes, red onion, and cilantro.
- Serve with lime wedges.
Notes
- Swap brown rice for quinoa for extra protein.
