Ingredients
- 1 medium cauliflower, chopped
- 2 leeks, sliced
- 2 cups vegetable broth
- 1 cup milk
- 1 cup shredded cheese
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté leeks until soft.
- Add cauliflower, vegetable broth, milk, salt, pepper, and garlic powder. Simmer for 10 minutes.
- Transfer mixture to a baking dish and top with shredded cheese.
- Bake for 20 minutes until bubbly and golden.
