Ingredients

  • 2 medium eggplants
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp ground cumin
  • 1 tbsp tahini
  • 1 tbsp chopped parsley


Instructions

  1. Preheat oven to 400°F (200°C)
  2. Pierce eggplants with a fork and roast for 40 minutes until charred
  3. Scoop out flesh and drain excess liquid
  4. Blend eggplant with remaining ingredients until smooth
  5. Chill for 1 hour before serving
