Ingredients
- 2 medium eggplants
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp ground cumin
- 1 tbsp tahini
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 400°F (200°C)
- Pierce eggplants with a fork and roast for 40 minutes until charred
- Scoop out flesh and drain excess liquid
- Blend eggplant with remaining ingredients until smooth
- Chill for 1 hour before serving

- Choose eggplants with smooth, shiny skin
- For extra smokiness, grill the eggplants instead of roasting
