Ingredients
- 1 pound dried split peas
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 4 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Rinse the split peas under cold water.
- In a large pot, combine peas, onion, carrots, celery, broth, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the bay leaf and blend half the soup for a creamier texture.
- Serve hot.

- Store leftovers in the fridge for up to 3 days.
