A healthier twist on the classic chicken pot pie, featuring cheddar bay biscuits as the crust.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1/2 cup low-fat cheddar cheese, shredded
- 1 cup low-sodium chicken broth
- 1/4 cup whole wheat flour
- 1/2 cup plain Greek yogurt
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1 package reduced-fat cheddar bay biscuit mix
Instructions
- Preheat oven to 375°F.
- In a large bowl, mix chicken, vegetables, cheese, broth, flour, yogurt, and spices.
- Pour the mixture into a baking dish.
- Prepare biscuit mix as directed and spread over the chicken mixture.
- Bake for 25 minutes or until the biscuit topping is golden brown.
Notes
- Use rotisserie chicken for quicker prep.
- Add more vegetables for extra fiber.
