Description

A creamy, flavorful soup made with cheddar, cauliflower, and roasted garlic for a healthy and satisfying meal.


Ingredients

  • 1 head cauliflower, chopped
  • 4 cloves garlic, roasted
  • 2 cups shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup milk (or unsweetened almond milk)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower and garlic with olive oil, salt, and pepper, then roast for 25 minutes.
  2. In a pot, sauté onion until soft. Add roasted cauliflower and garlic.
  3. Pour in vegetable broth and simmer for 10 minutes.
  4. Blend the soup until smooth, then return to the pot.
  5. Stir in milk and cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste. Serve warm.

Notes

  • For a thicker soup, reduce the broth by ½ cup.
  • Substitute dairy milk with a plant-based alternative if needed.
