A creamy, flavorful soup made with cheddar, cauliflower, and roasted garlic for a healthy and satisfying meal.
Ingredients
- 1 head cauliflower, chopped
- 4 cloves garlic, roasted
- 2 cups shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup milk (or unsweetened almond milk)
- 1 tbsp olive oil
- 1 small onion, diced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower and garlic with olive oil, salt, and pepper, then roast for 25 minutes.
- In a pot, sauté onion until soft. Add roasted cauliflower and garlic.
- Pour in vegetable broth and simmer for 10 minutes.
- Blend the soup until smooth, then return to the pot.
- Stir in milk and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve warm.
Notes
- For a thicker soup, reduce the broth by ½ cup.
- Substitute dairy milk with a plant-based alternative if needed.
- Store leftovers in the fridge for up to 3 days.
