Description

A quick and healthy version of lasagna made in a skillet with ground beef, cheese, and whole wheat noodles.


Ingredients

  • 1 lb lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz whole wheat lasagna noodles, broken into pieces
  • 1 cup low-fat ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Brown the ground beef, onion, and garlic in a large skillet over medium heat.
  2. Add the tomato sauce, diced tomatoes, basil, oregano, salt, and pepper. Stir well.
  3. Add the broken lasagna noodles and mix until they are coated with the sauce.
  4. Cover and simmer for 15-20 minutes, stirring occasionally, until noodles are tender.
  5. Drop spoonfuls of ricotta cheese over the top, then sprinkle with mozzarella and Parmesan.
  6. Cover and cook for 3-5 minutes until cheese is melted.
  7. Serve warm.
