A healthy and delicious cheesy chicken broccoli rice casserole that’s easy to make and packed with flavor.
Ingredients
- 2 cups cooked chicken, shredded
- 2 cups broccoli florets, steamed
- 1 cup brown rice, cooked
- 1 cup low-fat cheddar cheese, shredded
- 1/2 cup plain Greek yogurt
- 1/2 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the shredded chicken, steamed broccoli, and cooked rice.
- Add the Greek yogurt, chicken broth, garlic powder, onion powder, and black pepper. Stir well.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Let it cool for 5 minutes before serving.
Notes
- You can use quinoa instead of brown rice for extra protein.
- Store leftovers in an airtight container for up to 3 days.
- For a crispier top, broil for the last 2 minutes.
