A healthy twist on a classic comfort food, this cheesy cream cheese corn casserole is creamy, flavorful, and easy to make.
Ingredients
- 2 cups corn kernels (fresh or frozen)
- 4 oz cream cheese (low-fat)
- 1/2 cup shredded cheddar cheese (reduced-fat)
- 1/4 cup plain Greek yogurt
- 1/4 cup milk (low-fat)
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 350°F (175°C).
- In a saucepan, melt cream cheese over low heat.
- Add Greek yogurt, milk, garlic powder, black pepper, and salt. Stir until smooth.
- Mix in corn kernels and half the cheddar cheese.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 20-25 minutes until bubbly.
- Garnish with fresh parsley before serving.
