Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 4 oz cream cheese (low-fat)
  • 1/2 cup shredded cheddar cheese (reduced-fat)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup milk (low-fat)
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, melt cream cheese over low heat.
  3. Add Greek yogurt, milk, garlic powder, black pepper, and salt. Stir until smooth.
  4. Mix in corn kernels and half the cheddar cheese.
  5. Transfer to a baking dish and top with remaining cheese.
