Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 4 whole wheat tortillas
- 1 cup fresh spinach
- 1/4 cup Greek yogurt
- 1 tsp lemon juice
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken breasts, garlic, salt, and pepper. Cook for 6-7 minutes per side.
- Remove chicken, shred it, and mix with mozzarella and Parmesan.
- Spread Greek yogurt and lemon juice on tortillas.
- Layer spinach and cheesy chicken mixture on each tortilla.
- Roll tightly and serve.
