Ingredients
- 1 lb lean ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add onion and garlic, cook until softened.
- Stir in potatoes, broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add milk and cheese, stir until cheese melts.
- Serve hot.
