Ingredients
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1 egg, beaten
- 1/4 cup breadcrumbs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix mashed potatoes, cheese, egg, breadcrumbs, garlic powder, salt, and pepper.
- Scoop mixture into muffin tins or shape into small rounds on a baking sheet.
- Drizzle with olive oil and bake for 25 minutes or until golden brown.
- Sprinkle with parsley before serving.
