A quick and healthy cheesy quesadilla recipe perfect for a light meal or snack.
Ingredients
- 2 whole wheat tortillas
- 1/2 cup shredded low-fat cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1 tsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté for 2 minutes.
- Place one tortilla in the pan.
- Sprinkle half the cheese evenly on the tortilla.
- Add the sautéed vegetables and diced tomatoes.
- Sprinkle the remaining cheese on top.
- Place the second tortilla on top.
- Cook for 3 minutes, then flip and cook for another 3 minutes.
- Cut into wedges and serve.
Notes
- Use a non-stick pan to prevent sticking.
- Adjust vegetables to your preference.
- Serve with salsa or guacamole.
