Ingredients

  • 2 whole wheat tortillas
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1 tsp olive oil
  • 1/4 tsp black pepper
  • 1/4 tsp salt


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté for 2 minutes.
  3. Place one tortilla in the pan.
  4. Sprinkle half the cheese evenly on the tortilla.
  5. Add the sautéed vegetables and diced tomatoes.
  6. Sprinkle the remaining cheese on top.
  7. Place the second tortilla on top.
  8. Cook for 3 minutes, then flip and cook for another 3 minutes.
  9. Cut into wedges and serve.
