Ingredients
- 1 lb lean ground beef (90/10)
- 1 can (10 oz) Rotel diced tomatoes & green chilies
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 8 small whole wheat tortillas
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
- Add Rotel tomatoes, chili powder, cumin, garlic powder, and onion powder. Simmer for 5 minutes.
- Warm the tortillas according to package instructions.
- Fill each tortilla with the beef mixture, then top with cheese, lettuce, diced tomatoes, and cilantro.
- Serve immediately.
Notes
- For extra heat, use hot Rotel tomatoes.
- Swap beef for ground turkey for a leaner option.
