Ingredients

  • 4 medium potatoes
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 lb ground turkey
  • 1 packet taco seasoning
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup plain Greek yogurt


Instructions

  1. Preheat oven to 400°F.
  2. Wash potatoes and pierce with a fork.
  3. Toss potatoes with olive oil, salt, and pepper.
  4. Bake for 45-50 minutes until tender.
  5. Cook ground turkey in a pan, add taco seasoning, and set aside.
  6. Cut potatoes open and fluff the insides.
