Ingredients
- 4 medium potatoes
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 lb ground turkey
- 1 packet taco seasoning
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup plain Greek yogurt
Instructions
- Preheat oven to 400°F.
- Wash potatoes and pierce with a fork.
- Toss potatoes with olive oil, salt, and pepper.
- Bake for 45-50 minutes until tender.
- Cook ground turkey in a pan, add taco seasoning, and set aside.
- Cut potatoes open and fluff the insides.
- Top with taco meat, cheese, tomatoes, green onions, and Greek yogurt.
- Serve immediately.

- Use sweet potatoes for extra fiber.
- Substitute ground beef for turkey if preferred.
