Description
A lighter take on classic lasagna with chicken Alfredo filling rolled in lasagna noodles.
Ingredients
- 8 lasagna noodles
- 1 cup cooked chicken, shredded
- 1 cup Alfredo sauce
- 1 cup ricotta cheese
- 1/2 cup spinach, chopped
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and lay flat.
- Mix chicken, Alfredo sauce, ricotta, spinach, Parmesan, garlic powder, salt, and pepper in a bowl.
- Spread the mixture evenly over each noodle.
- Roll up each noodle and place seam-side down in a baking dish.
- Bake for 20-25 minutes until heated through.
- Serve warm.
Notes
- Use whole wheat lasagna noodles for extra fiber.
- Add more Alfredo sauce on top if desired.
- Store leftovers in an airtight container for up to 3 days.
