A comforting and healthy chicken and stuffing casserole that’s easy to make and packed with flavor.
Ingredients
- 2 cups cooked chicken, shredded
- 1 box (6 oz) stuffing mix
- 1 can (10.5 oz) cream of chicken soup (low sodium)
- 1/2 cup low-fat milk
- 1 cup frozen mixed vegetables
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix cream of chicken soup, milk, garlic powder, onion powder, and black pepper.
- Layer shredded chicken and mixed vegetables in a baking dish.
- Pour the soup mixture over the chicken and vegetables.
- Sprinkle stuffing mix evenly on top.
- Bake for 25-30 minutes until golden and bubbly.
- Let cool slightly before serving.
Notes
- Use whole wheat stuffing for extra fiber.
- Swap cream of chicken soup for cream of mushroom for a vegetarian version.
- Store leftovers in an airtight container for up to 3 days.
