A comforting and healthy chicken and stuffing casserole that’s easy to make and packed with flavor.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup (low sodium)
  • 1/2 cup low-fat milk
  • 1 cup frozen mixed vegetables
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cream of chicken soup, milk, garlic powder, onion powder, and black pepper.
  3. Layer shredded chicken and mixed vegetables in a baking dish.
  4. Pour the soup mixture over the chicken and vegetables.
  5. Sprinkle stuffing mix evenly on top.
  6. Bake for 25-30 minutes until golden and bubbly.
  7. Let cool slightly before serving.

Notes

  • Use whole wheat stuffing for extra fiber.
