Description
Healthy chicken bell pepper ranch burritos are a delicious and nutritious meal option. They combine tender chicken, crisp bell peppers, and creamy ranch dressing in a whole wheat tortilla.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/4 cup ranch dressing
- 4 whole wheat tortillas
- 1/2 cup shredded lettuce
- 1/4 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken breasts and cook for 6-7 minutes per side.
- Remove chicken from pan and slice into strips.
- In the same pan, add bell peppers and cook for 3-4 minutes.
- Warm tortillas in a dry pan for 30 seconds.
- Spread ranch dressing on each tortilla.
- Add chicken, bell peppers, lettuce, and cheese.
- Fold tortillas into burritos.
- Serve immediately.
