A quick and healthy chicken burrito recipe packed with protein and fresh ingredients.
Ingredients
- 1 lb chicken breast, diced
- 1 cup cooked brown rice
- 1 cup black beans, rinsed
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1 avocado, sliced
- 4 whole wheat tortillas
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced chicken and cook for 5-7 minutes.
- Season with cumin, paprika, and salt.
- Warm tortillas in a dry pan for 30 seconds.
- Layer rice, chicken, black beans, tomatoes, onions, cilantro, and avocado on each tortilla.
- Fold tortillas into burritos and serve.
Notes
- Use rotisserie chicken for quicker prep.
- Add hot sauce if you prefer spicy burritos.
- Store leftovers in the fridge for up to 2 days.
