Description
A quick and healthy chicken chow mein packed with fresh vegetables and lean protein.
Ingredients
- 2 boneless, skinless chicken breasts (cut into thin strips)
- 8 oz chow mein noodles
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- 1 cup shredded cabbage
- 1 bell pepper (thinly sliced)
- 1 carrot (julienned)
- 2 tbsp low-sodium soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 cup green onions (chopped)
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat.
- Add chicken strips and cook until no longer pink (5-6 minutes).
- Add minced garlic and stir for 30 seconds.
- Toss in cabbage, bell pepper, and carrot. Stir-fry for 3-4 minutes.
- Mix soy sauce, oyster sauce, and sesame oil in a small bowl.
- Add cooked noodles and sauce to the pan. Stir well.
- Cook for 2 more minutes.
- Garnish with green onions.
- Serve hot.
Notes
- Use whole wheat noodles for extra fiber.
- Swap chicken for tofu for a vegetarian option.
- Store leftovers in an airtight container for up to 3 days.
