Description

A lighter twist on classic chicken cordon bleu, layered with lasagna noodles, lean chicken breast, ham, and low-fat cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken breast, shredded
  • 6 slices lean ham
  • 1 cup low-fat Swiss cheese, shredded
  • 1 cup low-fat mozzarella cheese, shredded
  • 1 cup low-fat cottage cheese
  • 1 egg white
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup low-sodium chicken broth
  • 1 tbsp cornstarch
  • 1/2 cup plain Greek yogurt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Drain.
  3. Mix cottage cheese, egg white, parsley, garlic powder, and pepper in a bowl.
  4. Whisk chicken broth with cornstarch in a saucepan. Heat until thickened.
  5. Remove from heat and stir in Greek yogurt.
  6. Layer noodles, chicken, ham, cheeses, and sauce in a baking dish.
  7. Repeat layers, ending with cheese on top.
  8. Bake for 25 minutes until bubbly and golden.

Notes
