A comforting and healthy twist on the classic chicken and dumplings, made into a casserole for easy preparation.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup skim milk
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
Instructions
- Preheat oven to 375°F.
- In a skillet, sauté onions, carrots, celery, and garlic in olive oil until soft.
- Add shredded chicken and broth, simmer for 5 minutes.
- Transfer mixture to a baking dish.
- Mix flour, baking powder, salt, milk, and herbs to form dumpling dough.
- Drop spoonfuls of dough over the chicken mixture.
- Bake for 25 minutes or until dumplings are golden.
Notes
- Use rotisserie chicken for quicker prep.
- Add peas or green beans for extra veggies.
- Store leftovers in the fridge for up to 3 days.
