Description

A comforting and healthy twist on the classic chicken and dumplings, made into a casserole for easy preparation.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup skim milk
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary


Instructions

  1. Preheat oven to 375°F.
  2. In a skillet, sauté onions, carrots, celery, and garlic in olive oil until soft.
  3. Add shredded chicken and broth, simmer for 5 minutes.
  4. Transfer mixture to a baking dish.
  5. Mix flour, baking powder, salt, milk, and herbs to form dumpling dough.
  6. Drop spoonfuls of dough over the chicken mixture.
  7. Bake for 25 minutes or until dumplings are golden.
