Ingredients

  • 1 cup pearl barley, rinsed
  • 2 cups low-sodium chicken broth
  • 1 lb boneless, skinless chicken breasts, diced
  • 8 oz mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add onions and garlic, sauté for 2 minutes.
  4. Add chicken and cook until no longer pink, about 5 minutes.
  5. Stir in mushrooms, thyme, salt, and pepper. Cook for 3 minutes.
  6. Add barley and chicken broth. Bring to a boil.
  7. Cover and transfer to the oven. Bake for 45 minutes.
  8. Remove from oven and let stand for 5 minutes before serving.

Notes

  • Use quick-cooking barley to reduce baking time.
  • Substitute vegetable broth for a vegetarian version.
