A nutritious and hearty dish combining chicken, mushrooms, and barley for a balanced meal.
Ingredients
- 1 cup pearl barley, rinsed
- 2 cups low-sodium chicken broth
- 1 lb boneless, skinless chicken breasts, diced
- 8 oz mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add onions and garlic, sauté for 2 minutes.
- Add chicken and cook until no longer pink, about 5 minutes.
- Stir in mushrooms, thyme, salt, and pepper. Cook for 3 minutes.
- Add barley and chicken broth. Bring to a boil.
- Cover and transfer to the oven. Bake for 45 minutes.
- Remove from oven and let stand for 5 minutes before serving.
Notes
- Use quick-cooking barley to reduce baking time.
- Substitute vegetable broth for a vegetarian version.
- Add chopped carrots or celery for extra vegetables.
