Description

Tender chicken meatballs with ricotta cheese, served in a creamy spinach Alfredo sauce. A healthy and flavorful meal.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • 1 cup Alfredo sauce
  • 1/2 cup milk


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground chicken, ricotta, Parmesan, egg, breadcrumbs, garlic powder, oregano, salt, and pepper.
  3. Shape into meatballs and place on a baking sheet.
  4. Bake for 20 minutes or until cooked through.
  5. Heat olive oil in a pan, add spinach, and sauté until wilted.
  6. Pour in Alfredo sauce and milk, stir until smooth.
  7. Add cooked meatballs to the sauce and simmer for 5 minutes.
  8. Serve hot.
