Description
Tender chicken meatballs with ricotta cheese, served in a creamy spinach Alfredo sauce. A healthy and flavorful meal.
Ingredients
- 1 lb ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cups fresh spinach
- 1 cup Alfredo sauce
- 1/2 cup milk
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground chicken, ricotta, Parmesan, egg, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Shape into meatballs and place on a baking sheet.
- Bake for 20 minutes or until cooked through.
- Heat olive oil in a pan, add spinach, and sauté until wilted.
- Pour in Alfredo sauce and milk, stir until smooth.
- Add cooked meatballs to the sauce and simmer for 5 minutes.
- Serve hot.
Notes
- Use fresh spinach for best flavor.
- Adjust milk for desired sauce thickness.
- Store leftovers in an airtight container for up to 3 days.
