A hearty and healthy skillet dish with chili, cheese, and potatoes.
Ingredients
- 2 medium potatoes, diced
- 1 tbsp olive oil
- 1 cup lean ground beef or turkey
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1/2 cup canned black beans, drained
- 1/2 cup canned corn, drained
- 1/2 cup tomato sauce
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook until tender, about 10 minutes.
- Add ground beef or turkey, onion, and garlic. Cook until meat is browned.
- Stir in black beans, corn, tomato sauce, chili powder, and cumin.
- Simmer for 5 minutes.
- Sprinkle shredded cheese on top and cover until melted.
- Season with salt and pepper.
- Serve hot.

- Use lean meat to reduce fat.
- Swap cheddar for a vegan cheese if preferred.
