Description
A quick and nutritious Chinese vegetable soup packed with fresh ingredients and ready in 30 minutes.
Ingredients
- 4 cups vegetable broth
- 2 cups chopped bok choy
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 2 cloves minced garlic
- 1 tbsp grated ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp white pepper
Instructions
- Heat sesame oil in a pot over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Add bok choy, mushrooms, carrots, and bell peppers.
- Stir in soy sauce and white pepper.
- Simmer for 15 minutes until vegetables are tender.
- Serve hot.
Notes
- Adjust soy sauce to taste.
- Add tofu for extra protein.
- Store leftovers in the fridge for up to 3 days.
