A simple and healthy side dish featuring roasted potatoes with chives and sour cream.
Ingredients
- 4 medium potatoes, cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh chives, chopped
- 1/4 cup sour cream
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Roast for 30-35 minutes until golden and crispy.
- Remove from oven and let cool slightly.
- Top with chopped chives and a dollop of sour cream.
- Serve warm.
