Description
A healthy and flavorful chicken skewer recipe perfect for Christmas. Made with a garlic parmesan marinade and cooked in an air fryer for a crispy finish.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions
- In a bowl, mix olive oil, minced garlic, parmesan cheese, oregano, paprika, salt, and black pepper.
- Add chicken cubes to the marinade and toss to coat evenly. Let it sit for at least 15 minutes.
- Thread the marinated chicken onto skewers.
- Preheat the air fryer to 375°F (190°C).
- Place the skewers in the air fryer basket in a single layer, leaving space between them.
- Cook for 10-12 minutes, flipping halfway, until the chicken is cooked through and golden brown.
- Sprinkle with fresh parsley before serving.
Notes
- For extra crispiness, spray the skewers lightly with cooking oil before air frying.
- Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
- You can substitute chicken breast with chicken thighs for a juicier result.
