Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp turmeric powder
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Stir in turmeric and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add carrots and celery. Simmer for 10 minutes.
- Stir in shredded chicken and spinach. Cook for 5 more minutes.
- Season with salt and pepper. Serve hot.
