Ingredients
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 whole wheat tortillas
- 1 cup shredded low-fat cheese
- 1/4 cup diced red bell pepper
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a pan and sauté spinach, mushrooms, and red bell pepper until soft.
- Season with garlic powder, salt, and black pepper.
- Place tortillas on a baking sheet.
- Spread the vegetable mixture evenly over two tortillas.

- Cover with the remaining tortillas.
