Description

A healthy and flavorful breakfast strata perfect for Christmas morning. This dairy-free version is packed with wholesome ingredients and can be prepared the night before.


Ingredients

  • 6 slices of whole-grain bread, cubed
  • 1 cup unsweetened almond milk
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cups baby spinach
  • 6 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika


Instructions

  1. Grease a baking dish with olive oil.
  2. Spread the cubed bread evenly in the dish.
  3. Heat olive oil in a pan and sauté onion and bell pepper until soft.
  4. Add spinach and cook until wilted.
  5. Spread the cooked vegetables over the bread.
  6. Whisk eggs, almond milk, salt, pepper, and paprika in a bowl.
  7. Pour the egg mixture over the bread and vegetables.
  8. Cover and refrigerate overnight.
  9. Bake at 350°F for 45 minutes or until set.
  10. Let cool for 5 minutes before serving.
