Description
A healthy and flavorful breakfast strata perfect for Christmas morning. This dairy-free version is packed with wholesome ingredients and can be prepared the night before.
Ingredients
- 6 slices of whole-grain bread, cubed
- 1 cup unsweetened almond milk
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cups baby spinach
- 6 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
Instructions
- Grease a baking dish with olive oil.
- Spread the cubed bread evenly in the dish.
- Heat olive oil in a pan and sauté onion and bell pepper until soft.
- Add spinach and cook until wilted.
- Spread the cooked vegetables over the bread.
- Whisk eggs, almond milk, salt, pepper, and paprika in a bowl.
- Pour the egg mixture over the bread and vegetables.
- Cover and refrigerate overnight.
- Bake at 350°F for 45 minutes or until set.
- Let cool for 5 minutes before serving.
Notes
- Use gluten-free bread for a gluten-free version.
- Add cooked sausage or turkey bacon for extra protein.
- Can be reheated in the microwave for leftovers.
