Description
A flavorful and healthy Christmas pasta salad featuring Cajun-spiced crab, fresh vegetables, and a light dressing.
Ingredients
- 8 oz whole wheat pasta
- 1 lb lump crab meat
- 1 tbsp Cajun seasoning
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- Toss crab meat with Cajun seasoning and set aside.
- In a large bowl, combine bell pepper, cherry tomatoes, red onion, and parsley.
- Add chilled pasta and seasoned crab to the vegetables.
- Whisk together olive oil, lemon juice, Dijon mustard, and minced garlic to make the dressing.
- Pour dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- For extra heat, add a pinch of cayenne pepper.
- Replace crab with cooked shrimp if preferred.
- Best served cold within 24 hours.
