Description

A flavorful and healthy Christmas pasta salad featuring Cajun-spiced crab, fresh vegetables, and a light dressing.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lump crab meat
  • 1 tbsp Cajun seasoning
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. Toss crab meat with Cajun seasoning and set aside.
  3. In a large bowl, combine bell pepper, cherry tomatoes, red onion, and parsley.
  4. Add chilled pasta and seasoned crab to the vegetables.
  5. Whisk together olive oil, lemon juice, Dijon mustard, and minced garlic to make the dressing.
  6. Pour dressing over the salad and toss gently to combine.
  7. Season with salt and pepper to taste.
  8. Chill for at least 30 minutes before serving.

Notes

  • For extra heat, add a pinch of cayenne pepper.
  • Replace crab with cooked shrimp if preferred.
