A hearty and healthy casserole with ground beef, rice, and a cheddar crust, perfect for Christmas.
Ingredients
- 1 lb lean ground beef
- 1 cup uncooked white rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14 oz)
- 1 cup shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 2 cups beef broth
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Cook onions, garlic, and bell pepper until soft.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in rice, diced tomatoes, salt, pepper, oregano, and beef broth. Bring to a simmer.
- Transfer mixture to a greased casserole dish.
- Sprinkle shredded cheddar cheese on top.
- Bake for 25-30 minutes, or until rice is cooked and cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
