Description

Ingredients

  • 1 lb lean ground beef
  • 1 cup uncooked white rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14 oz)
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 cups beef broth
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Cook onions, garlic, and bell pepper until soft.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in rice, diced tomatoes, salt, pepper, oregano, and beef broth. Bring to a simmer.
  5. Transfer mixture to a greased casserole dish.
  6. Sprinkle shredded cheddar cheese on top.
  7. Bake for 25-30 minutes, or until rice is cooked and cheese is melted and bubbly.
  8. Let rest for 5 minutes before serving.
