Description
A festive and healthy twist on the classic cheesesteak, featuring tortellini in a rich provolone sauce.
Ingredients
- 1 lb cheese tortellini
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 8 oz lean beef, thinly sliced
- 1 cup low-fat provolone cheese, shredded
- 1 cup low-sodium beef broth
- 1/2 cup low-fat milk
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 tsp salt
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper. Cook until softened, about 5 minutes.
- Add beef slices and cook until browned, about 3-4 minutes.
- Stir in beef broth, milk, provolone cheese, garlic powder, black pepper, and salt.
- Simmer until the sauce thickens, about 5 minutes.
- Add cooked tortellini to the skillet and toss to coat in the sauce.
- Serve warm.
Notes
- Use whole wheat tortellini for extra fiber.
- Substitute beef with mushrooms for a vegetarian version.
- Store leftovers in an airtight container for up to 3 days.
