Ingredients
- 1 lb lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (10 oz) red enchilada sauce
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in black beans, kidney beans, enchilada sauce, diced tomatoes, and corn.
- Add chili powder, cumin, paprika, salt, and black pepper. Mix well.
- Simmer for 20 minutes, stirring occasionally.
- Top with shredded cheese and let it melt before serving.
- Garnish with fresh cilantro.
