Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or almond milk for a dairy-free option)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add potatoes, vegetable broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
- Blend the soup until smooth using an immersion blender or transfer to a blender in batches.
- Stir in milk and adjust seasoning if needed.
- Serve warm, garnished with fresh herbs if desired.
Notes
- For a thicker soup, reduce the amount of broth.
- Store leftovers in an airtight container in the fridge for up to 3 days.
