Description
A light and healthy cabbage soup perfect for a quick Christmas dinner. Packed with nutrients and easy to prepare.
Ingredients
- 1 small head of cabbage, chopped
- 2 carrots, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in carrots and cabbage, cook for 5 minutes.
- Pour in vegetable broth and diced tomatoes.
- Season with thyme, salt, and pepper.
- Simmer for 20 minutes until vegetables are tender.
- Serve hot.
